The porcini mushrooms, collected in nearby woods, are the appetizer protagonists, as salame and pancetta. Casonsei (a typical hand-made ravioli), pizzoccheri, foiade and risotto are among our most tradizional first plates. Rifugio’ staff advice tagliatelle al ragù di cervo, make with deer’s meat.
As second plates, usually accompanied with polenta and mushrooms, we can taste the famous rabbit with juniper berries, deer hunter, roast kid, pork shank stew, venison with cranberries, jugged hare and other traditional dishes.
